Linguini with Clams

Attention, attention…Mr. Almost Paleo cooked tonight and he rocked my world. Well, he technically rocked mine and Vinny’s (his BFF) world because he was over for dinner. Clearly we love zoodles in this house and this time of year zucchini’s are everywhere. Yes! Zoodles were on the menu tonight and will be on the menu tomorrow. They are just so versatile. Tonight, clams and a tomato sauce, tomorrow sausage and a cream sauce. Here is Hub’s recipe:

2 tablespoons butter-we used grass fed unsalted
2 tablespoons EVOO
1 clove of minced garlic
1/2 cup minced onion
2 lbs. little neck clams
1 6.5 ounce can Snow’s chopped clams with half of the liquid reserved
2 large zucchini’s prepared and cooked zoodle style
1/2 a can Pastene Kitchen Ready tomatoes
1/4 cup white wine.

In a large, deep skillet melt the butter with EVOO and add the onions and garlic. Cook them on low until translucent and soft, about 10 minutes. Add tomatoes, wine, clam juice and canned clams. Crank the heat up so it comes to a light simmer for about 5 minutes. Season with salt, pepper and red pepper flakes. Add the clams and cover. Cook until most of the clams are opened, maybe 10 minutes, stirring occasionally. Added the cook zoodles, gently toss. Boom!

To make this Paleo, omit the white wine by substituting extra clam juice and use an all natural canned tomato

I say, he needs to cook more often. This was awesome.
